Ingredients

Tacos:

  • 1 lb mild white fish (cod, halibut, tilapia for example)
  • 1/8 cup olive oil
  • 1/8 cup fresh lime juice
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Kosher salt
  • 8 corn or flour taco-sized tortillas
  • Lime wedges, for serving

Slaw:

  • 2 cups shredded cabbage (red or green, your preference)
  • 1/4 cup shredded carrots
  • Juice of 1 lime
  • 1 Tbsp olive oil
  • 1/2 an avocado, cubed
  • Salt and pepper, to taste

Directions

  1. Prepare the fish seasoning: In a large zip top bag, mix olive oil, lime juice, chili powder, cumin, garlic powder, paprika, and Kosher salt.
  2. Add fish to the bag of seasoning and gently massage the bag so that the seasonings coat the fish. Place in refrigerator to marinate for 30-45 minutes.
  3. In the meantime, make your slaw by placing all of the slaw ingredients in a small bowl and mix until well combined. Cover slaw and place in refrigerator.
  4. About 20 minutes into your marinating time, preheat your oven to 350 degrees and wrap your tortillas in foil. Once the oven is preheated pop your tortillas into the oven for about 15-20 minutes or until they are heated through.
  5. After the fish has marinated, heat a large skillet over medium heat and drizzle with olive oil.
  6. Place the fish into the heated skillet and cook for 2-4 minutes, then flip or mix the fish pieces around to get the other sides and cook for another 2-4 minutes.
  7. Construct your tacos: Break up the fish into smaller pieces and layer with slaw in your warmed tortilla; add a squeeze of lime and salt and pepper to taste.

Of course, add any toppings you like! Perhaps, fresh cilantro, pico de gallo, a light drizzle of sour cream, a little bit of chopped red onion, even thinly sliced radishes are delicious.
