These nachos cover it all! They’re liver friendly, healthy, full of veggies, delicious, AND a great option for those with food restrictions.
Ingredients
Tacos
- 2 Tbsp olive oil
- 1 medium zucchini small diced
- 1 medium yellow onion small diced
- Taco seasoning (your favorite or use the recipe below)
- 2 tsp minced garlic
- 7-8 cherry tomatoes cut in half
- 10 mini sweet bell peppers stem removed, cut in half, scooped out
- 10 leaves endive
- 1 lb ground turkey
- 1 cup vegan mozzarella regular cheese (if preferred)
- 1 small avocado peeled, pit removed, diced
- 1 lime
- 1 small handful cilantro leaves
- Salsa (your favorite brand)
- Salt to taste
- Pepper to taste
Taco Seasoning
- 1 Tbsp ground cumin
- 1 Tbsp ground smoked paprika
- 1 Tbsp garlic powder
- 1 tsp ground allspice
- 1/4 tsp ground cinnamon
